Banana Split

Eat more superfoods! Try these delicious easy-to-make recipes, exploring new ways to incorporate nutrient-dense nutrition into your lifestyle.  Bon Appetite!

DESSERTS:

Banana Split
1 Banana (fresh or frozen)
½ C Organic Frozen Cherries
2 T Coconut Crème
1 T Chia Seeds
1 T Honey
½ T Vanilla Powder
1 T Sundried Coconut
1 T Wild Jungle Peanuts or Mac Nuts
1 T Bee Pollen

Slice banana in half long ways and place open on a plate.  In a high-powered blender, blend the cherries, Vanilla Coconut Crème, chia seeds, honey and vanilla powder.  Pour over banana.  Top with sundried coconut, chopped nuts and bee pollen.  A fast and easy desert that is a big hit with kids and unexpected company.  And it is great comfort food when you have a craving for something sweet.

Avacado Yougurt
1 avocado
1/2 lemon
1/8 tsp cinnamon
1/8 tsp nutmeg
3 Tbs Cocopura coconut oil
1 Tbs dark agave nectar
   (substitute 4 drops of stevia for low glycemic)
Pinch celtic sea salt
1 tbs. cacao nibs for topping

Put all ingredients in blender
Blend well
Sprinkle some cacao nibs on top
Yummy

Coconut Lemon Mouse
4 cups soaked almonds - peeled
1 cup of lemon juice
1/2 tsp sea salt
1/2 drops essential lemon oil
1/2 tsp lemon zest
1/4 cup of Cocopura coconut oil

Put all ingredients in blender
Chill and serve

Apple Spice Bars
2 cups shredded coconut
2 gala apples
process in food processor then add
pinch of sea salt
2 TB Almond Butter
1TB cinnamon
2 TB Cocopura coconut oil

Mix well- lay on sheets form into patties in a pie pan.
Let mixture set in fridge for 10 minutes
Cut into desired pieces

Pinapple-Coco Cupcake Parfait
2 1/2 cups chopped fresh pineapple
1 1/2 cups young coco meat
3-4 TB Cocopura Oil (melted)
Process well, then add 2 Tb Agave or 3 soft dates
Process while adding 1 1/2 TB ground psyllium.
Pour into parfait glass or wine glass.
Layer in chopped pineapple and shredded coconut.

Chill and serve.

Raw Organic Fudge
Made with Peace, Love, and Joy.  Sprinkled with Humor.

Other Ingredients:
1/2 C softened Coconut Créme
1/2 C agave
1 tsp sea salt
1 tsp peppermint
1/2 C carob powder
1/2 C cacao powder
handful goji berries (soaked)
handful fresh coconut meat
handful raw cacao nibs

Mix coconut créme, agave, sea salt, peppermint.  Sift carob and cacao powders and mix with coconut créme mixture.  Will pull together and away from sides of bowl.  Add agave to bind or powders to thicken, if necessary.  Add goji berries, coconut meat, and raw cacao nibs.  Place mixture into a 9x9 pan and compress.  Cut in squares.  Cover with plastic wrap and place in refrigerator for several hours.

Candied Nuts
2 cups of walnuts or pecans
1 tsp of sea salt
2 tbs. of Cocopura coconut oil
2-4 tbs. agave nectar or yacon syrup

Mix well

SMOOTHIES:

Cherry Bliss Smoothie
1 C Organic Frozen Cherries
1 Banana (fresh or frozen)
1- 2 T Vanilla Coconut Creme
1 T Chia Seeds
1 T Hemp Protein Powder
1 T Bee Pollen
1/2 t Vanilla Powder
Honey to taste

Blend in a high-power blender all ingredients, except bee pollen. (We recommend using a Vitamix, Blend Tec, or similar "commercial-style" blender.) Pour into a glass and hand mix the bee pollen for a refreshing crunchy treat. Enjoy!

Superfood Smoothie
1 C Organic Frozen Cherries
1 T Vanilla Coconut Creme
1 t Apricot Kernel (ground in a coffee grinder)
1 t Cacao Powder
1 t Chia Seeds
1 t Chlorella
1 t Hemp Protein Powder
1 t Maca Powder
Honey to taste

Blend in a high-power blender. This one's got it all! To your well being!

Smooth Operator Smoothie
1 cup orange juice
2 TB cocopura oil (melted)
1 cup strawberries

Blend and serve.

BREAKFAST:

Vivapura Fresh Granola
2 Apples (cored)
1 C Almonds, Mac Nuts, or Brazil Nuts
1 C Raw Rolled Oats (optional – they aren’t really raw)
1 C Sundried Coconut
½ C Goji Berries
¼ C Dried Cherries (optional)
¼ C Green Hemp Seeds
¼ C Monukka Raisins
2 T Cacao Nibs
2 T Chia Seeds
2 T Lucuma Powder (the magical ingredient)
2 T Bee Pollen
2 t Vanilla Powder

In a Cuisineart with the “S” blade, use the “pulse” function to chop apples, nuts and rolled oats to a slightly chunky consistence.  Be careful not to create “mush.”  Pour into a medium to large bowl.  In the Cuisineart, chop the sundried coconut, goji berries, dried cherries, green hemp seeds, raisins, cacao nibs, chia seeds, lucuma powder and vanilla powder. Pour into bowl with the already prepared ingredients.  Sprinkle on the bee pollen and mix all ingredients by hand.  Serve with raw nut mylk (see recipe below). Serves 4-6 people. What a way to start the day! (Our 4 children, ages 5,7,7 & 9, make this every morning on their own – so can you :)

Nut Mylk
1 C Almonds or Brazil Nuts
1 Frozen Banana (optional)
2 T Lucuma Powder

Soak almonds in pure water for 8-10 hours before use. Dispose of soak water.  This removes the tannins and breaks down the enzyme inhibitors for better digestion.  Brazil nuts can be used with out soaking.

In a high-powered blender (we recommend a Vitamix, K-Tec, or other commercial type blender), blend the nuts, banana and lucuma powder.  You can pour this mylk directly over your Vivapura Fresh Granola.

If you intend to enjoy the mylk by the glass, try the following: strain the mylk by pouring it through a nylon mesh paint strainer (available at the hardware store).  Squeeze the liquid through the strainer into your glass.  The “pulp” will remain in the bag (it can be used in dehydrated treats). If you intend for mylk to be the entirety of your morning meal, add bee pollen and hemp protein powder for energy.


DRINKS:

Mystical Mayan Energy Drink
1 T Cacao Powder
1 T Vanilla Coconut Creme
1 T Goji Berries
1 t Honey
1/2 t Sunfire Elixir (optional)

Try this delicious drink as a coffee substitute or an inspired version of hot chocolate.

Heat 1 cup of pure water (or your favorite medicinal herbal tea). Let it cool to a temperature comfortable to the touch.  Add ingredients and stir. The goji berries become hydrated in the water and add a chewy burst of flavor.

Creamy Chai Tea
1 Organic Chai Tea Bag
1 T Vanilla Coconut Crème

Wait for your Chai Tea to cool after steeping. Add Vanilla Coconut Crème and stir.  A delicious non-dairy, comfort drink!

Electrolytic Lemonade
1 lemon skinned
1 lime skinned
1 orange skinned
1 tbs. agave nectar
pinch of sea salt
small piece of ginger
4-6 cups of spring water
2 tbs. of coconut oil

Blend well; serve cold


SALADS & DRESSINGS:
 

Pumpkin Seed Cesar Dressing

1 T Pumpkin Seeds
Olive Oil
Apple Cider Vinegar
Salt

Grind pumpkin seeds in a coffee grinder. Mix in a bowl with olive oil, apple cider vinegar and salt to taste.  Add water if necessary. The above recipe is great for one person, increase amounts as needed. Toss Cesar Dressing into a romaine lettuce salad.  Try adding chopped sundried tomatoes and sundried Peruvian olives for a taste sensation.

Dijon Dressing
1 t Dijon Mustard
1 t Chia Seeds
Olive Oil
Apple Cider Vinegar
Salt
Water

Mix all ingredients in a bowl.  Add oil, vinegar and salt to taste.  Be sure to use water as the chia seeds absorb vast amounts of liquid for their little size.  Toss into your favorite salad.  Delicious on dandelion greens.

Any Chopped or Shredded Veggies

Wrapping your favorite salad or shredded veggies in Nori sheets is a great way to add variety and fun to meal time.  Also makes great travel food.


TOPPINGS & SPREADS

Garlic Butta
1 Cup Cocopura oil (melted)
1 to 2 Tbls minced garlic
Blend well, then pulse in 2 Tbls chopped parsley

Let cool in fridge. stores best in glass.
Spread on favorite cracker, live bread or mashed taters.
